Now, what do you love to make with those freshly picked strawberries? My favorite recipe to make this time of year is this EASY Goat Cheese/Strawberry Crostini! I'm more of an "assemble" gal, than "cook" gal. HA! Anyone else? Also, I absolutely love love love any and all appetizers.
I made these for a girls night in/wine tasting last Summer and they were a hit!

What you'll need:
1 baguette
2 tsp olive oil
salt & pepper to taste
1/2 cup strawberries - stems cut off and thinly sliced
1/2 cup goat cheese - crumbles or spread
1 tbsp basil (which I didn't use that night)
2 tbsp balsamic glaze ( I used the Rachel Ray brand from Walmart)
Instructions:

Preheat oven to 400 F. Line a baking sheet with parchment paper.

Place sliced baguette pieces on the parchment paper, about 1 inch apart, and brush the tops with olive oil. If desired, lightly season with salt and pepper.

Bake bread for 5 minutes or until edges look golden brown. Be careful not to toast the bread too much.

While bread is still warm, sprinkle (or spread) goat cheese on the sliced baguette. Arrange sliced strawberries on top, then sprinkle with basil. Finish by drizzling balsamic glaze on top.

Serve immediately.

fun party tip: even if we can't socialize with girlfriends right now, you could host a wine tasting later this Summer or just for you and you spouse one night as a "date night" at home. I used black Kraft paper as a "tablecloth" and then used a chalk pen to write what the wines were and cute lines to what cheeses they paired best with! My personal favorite wine to pair back with the strawberry crostini is a rosé, Riesling or sauvignon blanc. Cheers!
